I try to eat at least half of a mid size red onion. Add to your salad or quick stir’fry of cauliflower, broccoli and some tomatoes but do not fry the onion.

A dozen foods or groups of foods are known to irritate the stomach and esophagus, causing inflammation, triggering acid reflux.
One group includes Alliums – onions, garlic, shallots, leeks and Brassicas – cabbage, broccoli, cauliflower, brussel sprouts, bok choy.
These vegetables are high in naturally occurring organosulfur compounds. Sulfur is part of hundreds of physiological processes and is an important element to our healthy.
Sulfur also causes stomach gas, bloating, thus promoting acid reflux in some people. The extent organosulfur compounds breakdown or degrade during cooking is unknown at this time.

Due to the condition of my esophagus, my gastroenterologist says NO ONIONS! Do white, yellow, or red onions have the least acid? Does cooking to carmelization get rid of the acids?

Cutting out chocolate and reducing coffee are bad enough, please help me find a way to fit some onions back into my eating!
